This summer, a secret culinary gem is quietly making waves in Westhampton Beach. Tucked discreetly inside Sydney’s “Taylor” Made Cuisine, Sushi by Boū is bringing its signature omakase speakeasy experience to the Hamptons just in time for the 2025 season. Officially opening on May 23, this hidden sushi counter offers a transportive, twelve-course journey that blends elevated Japanese tradition with modern coastal energy.

The latest addition from the New York–based hospitality group Simplevenue, Sushi by Boū Westhampton marks the brand’s 25th location nationwide—and its first in the Hamptons. Behind the concept is founder Michael Sinensky, who shares, “Bringing our flagship Sushi by Boū to the Hamptons is an exciting milestone for us. Our intimate dining experience, featuring high-quality sushi, offers guests an unforgettable culinary escape.”

True to the brand’s ethos of transforming small, unexpected spaces into high-touch culinary moments, the Westhampton outpost welcomes guests through a riddle-concealed entrance and into an intimate, eight-seat sushi bar with a beach-inspired design. It’s a wink to the Hamptons lifestyle refined, yet effortlessly playful.

In just 75 minutes, diners are treated to a 12-course edomae-style omakase, carefully curated and prepared by a private chef. The experience invites guests to let go of decision-making and trust in the artistry of the chef “omakase” meaning, quite literally, “I’ll leave it up to you.” Each course is a celebration of seasonality, balance, and craftsmanship, featuring selections such as Toro, Botan Ebi, Unagi, Hotate, Ikura, and a Hamptons favorite: Wagyuni, the decadent surf-and-turf of wagyu beef and uni.

The $75 price includes a round of sake, and those craving more can opt for the Boū-gie upgrade, three additional market-driven courses that elevate the journey even further.

Before or after their seating, guests are encouraged to sip wine, beer, or sake on the patio or front lawn, an ideal way to extend the evening and linger under summer skies. A petite dessert offering rounds out the experience for those seeking a sweet finish.

Sushi by Boū Westhampton is open Thursday through Sunday, with limited seatings between 5 p.m. and midnight:
